A life update from me and a question (and menu) for you!
Hi there,
How’s it going over there? I’m so curious, are you meal prepping much these days? Abigail and I are working on a big project that’s required us to be in my kitchen doing 2-3 full on meal prep sessions a week for the last two weeks. It’s been hard work and a lot of food to manage (we’ve both donated a lot to our local free fridges) but we’re so excited for what’s to come. Plus, having dinner sorted every night for the past couple weeks has been undeniably great—more time for Love Island UK? Sign me up.
That said, other than the meal prep I’m doing for this project and the big meal prep Abigail and I do for our monthly class (it’s just around the corner, join us!), I’m not really meal prepping much at all lately. A little life update: Over the course of the past six months-or-so, I’ve been slowly shifting the focus of my work away from personal cheffing and toward serving a broader community with lots of kitchen & entertaining tips, a touch of personal style content, and of course, errant slices of my little life that I think you might find interesting—if you’re reading this, you’re part of that community! Thanks for being here, pal.
So meal prep is much less on my mind. But I’m genuinely curious about what’s going on in your kitchen, and you know I cannot resist a poll, so let’s do one here!
Okay, yay, I’m excited to incorporate more polls here, so stay tuned. In the meantime, take a peek at this week’s menu roundup. As always, everything is meal prep appropriate, but as I mentioned, you’ll more than likely find me keeping things a little more spontaneous in the kitchen and making these dishes on the fly.
Mains
Grillable Tofu Burgers (Veg, GFO) Abigail and I made a veggie forward taco topping with tofu last week. I was absolutely blown away by how satisfying the tofu was in the context of that dish. So much so that it sent me straight into my latest tofu *era* so I’ll be trying these burgers ASAP. (Use GF breadcrumbs.)
