Hi there,

How’s it going in your kitchen? I feel like a broken record when I say mine’s been incredibly busy lately. I’ve had a few exciting brand partnerships come through, have been doing a little recipe testing for a friend’s cookbook, and catered an event for the first time since 2020 this past week. I’m exhausted but loving every moment of it.

Can I level with you for a moment? Yes? Okay, great. Here’s what dinner’s looked like for the past 5 days:

Sunday: Instant ramen
Monday: Takeout burrito bowls
Tuesday: PB&J
Wednesday: Big snacks
Thursday: Scrambled eggs and an English muffin

Cooking elaborate meals for myself and my family has clearly not been a priority this week. And that’s completely fine, life happens, I’ll get back into it. In light of this busy season, this week’s Fresh Letter menu features dishes I lean on when I need to put dinner on the table without much thought, muss, fuss, etc.

Mains

Pan Seared Salmon with Soy Mustard Glaze (GFO) Seared salmon is my back pocket dinner main. I make it around once every two weeks when things are especially hectic because it comes together in just around 10 minutes. If I’m in a huge rush, I skip the sauce and keep it extra simple. (Use GF soy sauce.)
