How’s it going in your kitchen? After neglecting it for the past week, I’m getting ready to hunker down and get cozy in mine. Abigail and I are so excited to have finally shared Meal Prep Made Simple with the world. But oddly enough, turns out the final stretch of publishing a cookbook is not super conducive to putting a home-cooked dinner on the table every night.
But yesterday, we did manage to spend the day together in my kitchen prepping for a little book release party. We had a few close friends over to celebrate over cocktails and snacks from the book, a huge charcuterie spread, and goodies from Gotham Greens and Spring and Mulberry. And toward the end of the evening, Hillary gave us one of the most meaningful compliments I’ve ever received: “This party has Nancy Meyers vibes.” My god. The queen of coziness? I couldn’t have been more flattered.
For this week’s menu, we’re keeping the Nancy Meyers mood going with super homey dishes. So head into your kitchen, get a festive playlist going, and imagine yourself sitting down to eat these recipes at your second kitchen island. Let’s get into it:
Mains
Spaghetti Carbonara Frittata (GFO) Make your carbonara fresh as this recipe indicates, or if you happen to have leftovers from a restaurant meal, turn it into this. I cannot think of a more comforting meal. (Sub GF spaghetti.)
Stuffed Honeynut Squash (VegO, GF) If honeynut squash had existed when It’s Complicated was filmed, I feel like Meryl definitely would have made this dish in her newly renovated kitchen. (Sub beyond meat for the sausage to make this vegetarian.)
